Recipe #2

My favorite pumpkin bars! I LUV pumpkin desserts - they are the epitome of all great fall treats! Make some, but try not to eat the whole pan. Just try...
Pumpkin Bars
4 eggs
1 + 2/3 cup sugar
1 cup oil
16 oz. canned pumpkin
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
Frosting:
4 oz cream cheese, softened
1/2 cup butter
1 tsp vanilla
2 cups powdered sugar

Beat together eggs, sugar, oil and pumpkin until fluffy. Sift together flour, baking powder, cinnamon, and soda. Add pumpkin mixture and mix thoroughly. Spread batter into a lightly greased 10x15 pan/cookie sheet and bake at 350 degrees for 25-30 minutes. Cool completely and frost with cream cheese frosting. Cut into bars.
